Super Easy Tahini Cocolate Chip Cookies

These are the cookies I make when I want something sweet that still feels grounding. They’re soft and chewy in the middle, slightly crisp on the edges, and rich without being heavy. Tahini gives them depth, maple syrup keeps the sweetness gentle, and a pinch of cardamom makes them feel warm and comforting rather than dessert-y.

I slightly underbake them and finish with flaky sea salt. They’re simple, satisfying, and the kind of cookie you keep coming back to.

Ingredients (makes about 16 cookies)

Almond Tahini Cookie Dough

2.4 dl almond flour (1 cup)
2.4 dl runny tahini (1 cup)
1.2 dl maple syrup (½ cup)
1 egg
1 tsk baking soda (1 teaspoon)
1 heaped cup dark chocolate chips (about 170 g)
1 scoop collagen peptides, optional
A small pinch ground cardamom
Flaky sea salt, for topping

How to

  1. Prepare the dough:
    In a bowl, mix almond flour, tahini, maple syrup, collagen if using, chocolate chips, and cardamom until combined. The dough should be thick and hold together. If it feels loose, add a little more almond flour.

  2. Chill:
    Cover the bowl and refrigerate the dough for 30 minutes. This helps the cookies keep their shape and improves the texture.

  3. Bake:
    Heat oven to 175 °C. Line a baking sheet with parchment paper. Remove the dough from the fridge and mix in the egg and baking soda until fully incorporated. Scoop into about 16 portions, spacing them out on the tray. Bake for 10–11 minutes, until the edges look set but the centres are still soft.

  4. Finish:
    Remove from the oven and let the cookies rest on the tray. Sprinkle with flaky sea salt while warm. They firm up slightly as they cool but stay soft in the middle.

To Serve

Best enjoyed slightly warm with coffee or tea. They also keep well in an airtight container and make an easy, satisfying snack when you want something sweet without overdoing it.
